一人料理の零失敗。蒜香意粉。Garlic Spaghetti[中文食譜/ENG-Recipe]
有時候口啖啖⋯便會想吃些重口味的東東。我第一時間便想起了 蒜頭(´・Д・)」然而,這次參考了外國的Spaghetti aglio e olio,變成極易煮的蒜香意粉。食譜的油份給我減了一大半,很健康,偶爾吃一次也不錯喔。

份量 Serve: 1

意大利粉 Spaghetti ~70g (1 person) | 蝦 Shrimp 10-15 pcs |
蒜頭 Garlic 1 clove | 牛油 Butter 1 tsp |
紅蔥頭 Shallot 1 pc | 橄欖油 Olive oil 2-3 tsp |
鹽和黑胡椒 Salt & Pepper Some |
做法 Methods:
(1) 先將蒜頭切碎、紅蔥頭切圈
Chop the garlic into small pieces, as well as slice the shallot
(2) 蝦用廚房紙稍為印乾
Dry the shrimp with a paper towel
💡 急凍蝦解凍放法:1️⃣ 前一晚將急凍蝦放在下層雪櫃解凍 2️⃣ 假如想更快,直接把急凍蝦放在水中15分鐘 Method of thawing shrimp: 1️⃣ Thaw overnight in the fridge 2️⃣ For faster thawing, put it in a bowl of water for 15 minutes
(3) 煮開一鍋水,水滾後放入鹽調味,便可以放入意粉
Boil a pot of water. Once it starts to boil, add some salt and the spaghetti
💡 煮意粉的時間視乎包裝,用包裝顯示的時間減一分鐘,煮出來的意粉會更有質感(例給:包裝寫9分鐘,便煮8分鐘) The cooking time depends on the instruction of the pack, minus 1 minute of the suggested time in order to helps the spaghetti firm when bitten (e.g. If the package calls for 9 minutes, then cook for 8 minutes.)
(4) 等待意粉的同時,用中細火燒熱平底鍋,並加入牛油和橄欖油
While waiting, heat the frying pan over medium low heat, then add butter and olive oil
(5) 再加入蒜頭和紅蔥頭爆香
Add the garlic and shallot, and fry
(6) 當聞到蒜香味時,便可以加入蝦,再加入黑胡椒,炒至金黃色
When it smells good, add shrimp, season with pepper, and fry until golden brown
💡 全程用中細火,因為太高溫的話,牛油易焦,蒜頭也會變苦 Keep using medium low heat, as the butter may easily burned and also the garlic will turn bitter, if the heat temperature is too high
(7) 這時,意粉應該煮好了,把它移到平底鍋中
Now, the pasta should be done, gently transfer it to the frying pan
(8) 覺得意粉有點太乾,可以加一匙剛才煮麵的水
If the spaghetti is too dry, pour a spoon of boiled water
💡 水加多一點沒關係 Doesn't matter for adding too much water
(9) 用力多攪拌意粉,助它乳化,完成
Stir it frequently, that helps to combine the water and oil, the spaghetti would then taste better. And it's done!
💡 依個人喜好,可再加入一點黑胡椒調味 Season with some pepper if you like
